The Bahamas usually has beautiful weather in the winter.  Anywhere in the Caribbean would be a good choice for a winter vacation.  Atlantis is on Paradise Island, right by Nassau.  It has a huge water park with slides, tube ride, pools, aquarium, beach, etc. There's a day camp for the kids but 2.5 & 1 might be too young. There's also a casino and shows in the hotel. Everything's on the premises so you don't need to worry about any transportation.

You can't go wrong with most Caribbean destinations.  Aruba is further south and it has some suite hotels with kitchens. There was a kosher restaurant in Aruba but I don't know if it's still open.  Acapulco, Mexico has a hotel with a kosher restaurant, shul and mikva.  I think it's the Hyatt.  I haven't been there so I don't know if the place is kid-friendly.

You could also head to Florida (Orlando or Miami Beach) or southern California (LA or San Diego).  The weather won't be a problem in any of those locations.  Miami and LA have many kosher restaurants and plenty of activities for the kids.

Best of luck!

Food is diffcult in the Bahamas.  It's best to bring as much as you can or have some food shipped to your hotel.  There might be some kitchenettes available at Atlantis, but it would probably be very expensive.

You could also stay at Comfort Suites.  It's directly across the street from Atlantis and you get full privileges to use all Atlantis facilities.  Breakfast is usually included and the rates are much lower than at Atlantis.

If your looking for a great way to travel during the winter then Check out www.ClubKosher.com . Club Kosher runs family trips in the winter covering everything from Hotel, Food, Fun Stuff for kids. They pick a different location every year in Jan. This past year we went to Jamaica with them. It was a blast. I would highly recommend it to anyone.

The Bahamas are perfect for family vacations. In the Bahamas there are plenty of family friendly hotels and resorts and many of the hotels offer kids clubs, with supervised activities to keep the little ones happy. Kid friendly dining options and world class dining, museums to explore, water parks, combined with the abundance of nature to enjoy and the beautiful beaches make the Bahamas ideal for family fun and adventure. Experience a Bahamas family vacation!

The Bahamas offers many types of vacations such as family, romantic, adventure, Eco-tourism or underwater exploration. Tourists can enjoy experiences ranging from swimming with the dolphins to sport fishing, scuba diving, snorkeling, hiking, shopping or relaxing by the beach.
